I havn't used a 3 wood for a while now (have a Driver and a 5-wood, seems to work well for me), but i used to use an Adams Tight Lies. This was back in the days when fairway woods were still a new thing. Sometimes I would get the cleanest, most effortless, most beautiful shot from that thing.

The biggest problem I had with the fairway wood was that I couldn\'t hit it off the tee very well. It sounds to me like you want to be in more fairways, and so you'll be wanting more control off the tee. In this case I would suggest a more traditional 3-wood rather than a fairway wood. Something with a bigger face and easier to hit the sweet spot when teed up. Then you should find yourself in more fairways.

Besides if you're in the fairway, it's not hard to hit a traditional 3-wood from the ground anyway (with some practice). So you'll still be able to 'go for it' on the par 5s!
